Gluten-Free Gingerbread Man Cookies

These gingerbread cookies are our family's favorite holiday cookie so far this year. Hope you get a chance to try them.




I have a sneaky little helper that loves to taste.....a lot!


 Scout loved making the cookies too.



Gluten-Free Gingerbread Man Cookies

Ingredients:

  • 2 1/2 gluten free flour blend ( i used half quinoa and half tapioca)
  • 1/4 teaspoon salt
  • 2 teaspoons baking soda
  • 1/2 teaspoon  xanthan gum
  • 2 teaspoons grated fresh ginger
  • 1 cup maple sugar
  • 1/2 cup coconut oil (melted) 
  • 1/2 cup unsulfured dark molasses
  • 1 large egg
  • 1 teaspoon cinnamon 

Preparation:

Preheat oven to 350° F. 
Line 2 large baking sheets with parchment paper. 
Combine dry ingredients in a medium bowl and whisk to thoroughly combine. 
Place sugar,oil, egg, ginger and molasses in a large mixing bowl. Beat on high until combined then add dry ingredients and beat on medium speed to combine. 
Form into gingerbread girls and boys. use a little extra flour to keep from sticking. 
Bake in preheated oven for about 15 minutes.

I LOVE it! With the baby sleeping the whole way through! I am going to have to bookmark these. We haven't had much luck with making gluten free gingerbread people, but your kids sure look like they are enjoying these...so we'll have to give it a go next week.

we cant have any sugar, dairy or gluten. no maple syrup or honey. any recommendations for subs to make this work for us?

ME2-yes,
you can use stevia. can you eat dates? If so, date sugar works great.(just dried, powdered dates)It is a gluten free dairy free recipe.
