from my garden into my kitchen

I've been roasting veggies from the garden with olive oil and salt lately. So simple and delicious. 
 Had a craving for pizza a couple weeks ago while the kids were at a sleep over. I looked in the fridge to see what was in my mystery ice box and here is what I came up with. I made the crust with 1 avocado, 4 eggs, a little coconut and quinoa flour (about 1/4 cup total), xanthamn gum, baking soda and salt, blended in the food prosseor and put in a buttered pie dish to bake for about 10 minutes on 395, then added cheese, onions and peppers from the garden on top and it baked up golden brown. Sounds strange, I know, but I thought I was in Italy eating a plate of gluten. John and I scarfed it down. I will have to make this again for the kids, as they would love it. Hope some of you will try it and let me know what you think.

a coop warming

I have been very busy with my summer camp this week, but I wanted to update you on our coop and chicks. Well, we finished the coup on Sunday and  our permit was approved on Monday. On Thursday, the chicks spent their first night in the coop. They all seem happy, and I am very happy to have my bathroom back. It is so nice to walk out at sunrise to the coop and see the chicks making their way down the ramp to greet me. It really feels like my little peace of farm paradise.





Can't wait to find eggs in little egg door. 

 Pilot just loved playing in the coop and sliding down from it. 

 As John put the last finishing touches on the coop, we all gathered inside to show the chicks their new home.  How many people and chickens can fit in a coop? It was the best coop warming party I have ever attended. 

Scout had fun in the dirt with the chicks. That will be the only time he gets to get down and dirty with the chicks in the coop since there was no poop in it yet.

 I think they like it!

Jets are in the sky....Ukulele Queen

I have to share this with all of you. I will give you a little back story. My daughter Jetta started playing the Ukulele about a year ago or less and at the same time we gave her our old camera to use. She figured out how to video herself and one day came to us and showed us some "shows" she had created on it with her Uke. John and I loved them so much that we posted them on youtube. Then yesterday, when we got home from camp I had a message from the The Fruity Ukuladies about how much they loved Jetta's songs and video. Attached was a song they they created using Jetta's original tunes. All I can say is "Wow!" These ladies are so special and so entertaining. Jetta was flattered that they used her songs and I was touched by the whole thing. Since then I have listened to many of their cover songs and  I am definitely a fan or their music and them. They put a smile on my face.  Below you will find their response song to Jetta's video and then I am also attaching the original songs from Jetta on episode 2 of the Ukulele Queen/Thumbs up show. Then you can see the original songs. Both are very entertaining to watch. Enjoy!
