Gulten-free Vanilla Cake with Chocolate Icing

Gulten-free Vanilla Cake with Chocolate Icing 

Ingredients:

2 C sorghum flour
1 C date sugar
1/2 t sea salt
1 t baking powder
1 t baking soda
1 t xanthan gum
1 C milk
3 eggs
3 T coconut oil, or butter melted
2 T gluten-free/ alcohol-free vanilla extract
Seeds from 1 vanilla bean

Instructions:

Preheat the oven to 350ºF. butter a cake pan
In a mixing bowl, whisk the flour and dry ingredients together. Then mix in milk, eggs, butter, and vanilla. Beat with a mixer until the cake batter is smooth. Pour into cake pan.

Bake in the center of a preheated oven until firm and golden. About 20 - 30  minutes. Keep checking after 15 minutes.

Cool the pan on a wire rack briefly, then gently pop out on a rack to cool before icing.



Chocolate Icing:

2 1/3 C sifted coconut sugar
2/3 C cocoa powder
8 t  Butter, room temperature
1/3 C Milk, room temperature
2 t  gluten-free/ alcohol-free vanilla extract

Directions:

In a small bowl, sift together the sugar and cocoa powder. Add butter, milk, and vanilla; stir until smooth and free of lumps. Ice cake as desired. Enjoy!
