Making Coconut Kerfir

I just finished making a batch of fermented coconut kefir pudding and water for Jetta. It is a perfect snack for her and she has been enjoying it since she was a baby. Her Aunt Jessica introcuded me to it during my pregnancy and the whole family loved it ever since. What is so wonderful about fermented foods?
1. Fermentation neutralizes unhealthy chemicals found in grains and beans.
2. Fermentation adds a host of beneficial micro-organisms to food, making them more digestible and increasing the healthy flora in our intestinal tracts.
3. Dairy products are also great fermented. Fermentation adds natural lactase, as well as many other wonderfulfactors, which make dairy more digestible, particularly for those who are lactose sensitive. Good intestinal flora prevent bloating, gas, and yeast overgrowth by controlling the pH level of the intestines through production oflactic acid. In babies, it helps prevent diaper rash, diarrhea, and colic, as well as allergies.
